German Chocolate Ice Cream Cake Pops

The heat in Texas right now is no joke. It’s hard for me to motivate myself to go outside when it’s this hot, and all I want to do is drink lots of water and devour all the cold foods I can find in my apartment. Ice cream is one of my favorite treats, and I especially crave it during the hot summer months. I try not to buy it too often, because I’ll end up eating the entire container by myself, but sometimes you just need that ice cream fix. I’m not the only one who does this, right? 

Growing up I would get so excited when my mom made homemade ice cream. There was nothing quite like indulging in a bowl of creamy goodness, topped with fresh fruit or chocolate syrup. The memories we made sitting around the dinner table scooping up some fresh homemade ice cream still bring a smile to my face.
I’ve tried making ice cream in my ice cream maker many times, but it never turned out as good as my mom’s, and it was always a big mess. With the ice, salt, and time it took to make, plus all of my failed attempts, I finally reached my breaking point. I decided that homemade ice cream just wasn’t my thing… Until I found The Curious Creamery! 

The Curious Creamery is my saving grace when it comes to homemade ice cream. Not only can you add basically any ingredients you want, but you don’t need an ice cream maker. I was sold from the beginning!

The Curious Creamery has created an ice cream base that you mix with cold liquids, add in any flavors or ingredients you want, and then stick in the freezer. It’s as simple as that. Within minutes, plus freezing time, you have delicious ice cream that you can’t find anywhere else. They have a ton of recipes on their website that you need to check out. I never would have thought of half the flavors they made! Another reason I am a fan of The Curious Creamery is that you have more control over the amount of fat, calories and sugar you add to the ice cream. As long as you include the required ingredients (the amount of liquid in the ice cream mix and the amount of heavy whipping cream in the cake mix), your ice cream will turn out. Awesome, right?

You can find The Curious Creamery Ice Cream mixes in the Celebration Aisle at your local Walmart. If you can’t find it, I encourage you to talk to your store manager about ordering some! If you’re not sure if your Walmart carries The Curious Creamery, you can check out their store locater here. 

You can choose between the regular ice cream mix (which makes a pint at a time), or the ice cream cake mix for those bigger events when you need a little bit more. The other night I had some friends coming over for dinner, and decided to make some homemade ice cream for dessert. I knew the ice cream cake mix would do the job! I used the German Chocolate flavor, but decided I wanted to take my ice cream a step further. I love coming up with new recipes, and one of the first things that came to mind were cake pops… and so my German Chocolate Ice Cream Cake Pops were born. 

Cake pops are normally made with crumbled cake and icing that you mix together and form into balls. But since it’s summer and I love all things ice cream, I thought it would be fun to try making a cake ball with ice cream instead of icing. I wasn’t sure if it would work at first, but I went ahead and tried it, and I was blown away with the final product. The ice cream was delicious, and the cake that was mixed in added a richness and texture that I loved. And best of all, they were a hit with everyone who tried them!

I decided to stick with the traditional German Chocolate flavors and added lots of coconut, pecans and chocolate to the ice cream cake pops. I made a homemade coconut cake, added coconut shavings and chopped pecans to the ice cream, covered the balls in melted chocolate and topped them with some more coconut. The recipe was pretty involved, but it made a TON of ice cream cake pops, and they looked so pretty on display for my company. They were a refreshing treat on a hot summer’s night, and now I know I can make homemade ice cream without any hassle or failure. The only problem I have now is deciding what flavors to try next!

Ingredients

Scale 1x2x3x

For the cake

• 1 box coconut cake *(and additional ingredients for the cake)*
• 1 small pkg coconut cream pie pudding

For the ice cream

• 1 box Curious Creamery German Chocolate Ice Cream Cake
• 2 1/4 cups whipping cream
• 1 1/8 cups cold milk
• 3/4 cup sugar
• 1/3 cup unsweetened coconut flakes
• 1/3 cup chopped pecans

Toppings

• 1 large pkg dark chocolate or vanilla melting chips
• 1/2 cup unsweetened coconut flakes

Instructions

For the cake

1. Preheat oven to 350. Grease and flour cake pan.
2. Mix the pudding mix into the cake mix, then add the eggs, oil and water. Add the same quantity of milk as water and stir until smooth.
3. Bake according to package instructions, or until a toothpick inserted in the center comes out clean. Cool for 30 minutes before removing from cake pan.
4. Once completely cool, crumble the cake into small pieces.

For the ice cream

1. In a bowl, mix the cold whipping cream with the cold milk, sugar and one packet of the Curious Creamery German Chocolate Ice Cream Cake mix.
2. Whisk for 3-5 minutes, or until the mixture is thick and creamy.
3. Fold in the coconut, pecans and crumbled coconut cake.
4. Pour into a cake pan, cover and freeze in the freezer for 2-6 hours or until hard frozen.

For the cake balls

1. Once the ice cream is frozen, use an ice cream scoop to form 2-inch balls of ice cream, and place them on a chilled baking pan. (You need to work quick and form the balls well or they will melt and/or fall apart)
2. Carefully place a cake pop stick into the balls, then return them to the freezer for another 1-2 hours or until frozen solid.
3. Melt the chocolate or vanilla melting chips according to package instructions (I just used the microwave).
4. Carefully coat each cake ball with the melted chocolate, then sprinkle with some coconut on top. Return the cake balls to the chilled pan until the chocolate has hardened.
5. Store in an airtight bag or container for up to 2 months.

Notes

• I have found that the cake balls are SUPER hard right out of the freezer. I like to take them out to “warm up” in the kitchen for about 10 minutes before serving.
